Recreate the famous North Indian curry with Gymkhana’s rogan josh cooking sauce. The finest Kashmiri chillies add heat to a base of caramelised onions, garlic and tomatoes. This sauce will fill your kitchen with the aroma of ground ginger and garam masala. 

You can make your curry with lamb, beef or vegetables like squash and aubergine. The fragrant sauce also works well with firm fleshed fish such as monkfish.

At Gymkhana’s London restaurant, their lamb shank rogan josh is extremely popular. You can recreate it at home by cooking lamb shanks low and slow for around 2.5 hours. It’s ready to eat when the meat is tender enough to fall off the bone.

Cooking instructions:

1. Pan-fry your meat, fish or vegetables until three-quarters done.
2. Add the sauce with 2 tablespoons of water and bring to the boil.
3. Simmer for approximately five minutes, or until your ingredients are cooked.
4. Sprinkle with fresh coriander (optional) and serve.
